Oktoberfest USA

I was online looking for material for a new Authentic Voice post when I learned that the mayor of Munich tapped the ceremonial keg to kick off Oktoberfest at 5 a.m. Chicago time this past Saturday. Oktoberfest is high on my to do list. However, for now, the best I can do is go to local Chicago breweries that celebrate Oktoberfest. Unless your local breweries serve imported German beers, it is my understanding that most of the festival beers made in the USA miss the mark - too sweet compared to authentic German amber ales. The good news is that will change this year. My research revealed some U.S. craft brewers (e.g., Sierra Nevada) have been working directly with different Bavarian breweries to produce transatlantic collaboration beers.

Given I usually write about food and culinary innovation, I would be remiss not working a culinary theme into today’s post. Check out our recipe for Beer Brined Chicken with Chipotle Honey Lacquer. The recipe calls for two bottles of dark beer; creative chefs should use two bottles of transatlantic collaborative beer to promote an Oktoberfest USA entrée LTO special.
