ACF 2009 Regional Student Culinarian Winners
The ACF Student Culinarian Competition is sponsored by Custom Culinary, Inc.
At Custom Culinary, Inc., we find inspiration in the infinite dishes that can be created and the importance of sustaining the tradition of culinary excellence. It’s no wonder then that we continue to sponsor the American Culinary Federation’s Student Culinarian Award.
This year’s four regional winners prepared dishes unique enough to get them a spot vying for the National ACF Student Culinarian Award in Orlando from July 11-14. Congratulations to all competitors and especially to these four regional winners:
• Northeast: Brianne Slocum, ACF Chefs and Cooks of the Catskill Mountains
• Central: Kelly Conwell, ACF Greater Kansas City Chefs Association
• Western: Victoria Maxfield, ACF Beehive Chefs Chapter
• Southeast: Andrew Addleman II, ACF Space Coast Chapter
This year’s ACF Student Culinarian Award format mimics international competitions. Each of these regional winners received a market basket sixty days in advance with the list of ingredients they will receive the day of the competition. This list includes seafood favorites trout, shrimp and little neck clams, plus Yukon gold potatoes, and corn. Competitors have two hours to prepare and ten minutes to plate two portions each of an appetizer and an entrée for the judges. They will be scored on their creativity and execution.
These four distinguished competitors will have practiced their creations for months, many times a week, usually in front of a local ACF judge, chef mentor or culinary school professor. Their dishes will be conceptualized, tweaked, scrapped, and perfected many times over in preparation for the big day. Theirs will be the work of culinary inspiration.
