Chef Michael Smith - Custom Culinary, Inc.Chef Michael Smith, CEC, AAC was inducted into the American Academy of Chefs (AAC) during the American Culinary Federation’s 2011 Annual National Conference in Dallas. The AAC, the honor society of the ACF, is made up of less than 5% of ACF members and encompasses individuals who have significantly contributed to the group itself and the culinary profession in general. Twenty ACF members were inducted into the AAC this year.

Smith’s mentor-sponsors were Chef Michael Minor, CEC, AAC, HGT, and Steve Jilleba, CMC, AAC, HGT.

Minor’s support goes back to Smith’s culinary roots. Smith explains: “I received a much needed scholarship to the CIA as a young aspiring culinarian many years ago from the Minor family. I now have the great honor of working and continuing to learn from Mike on a daily basis.” Jilleba is “a long time friend whose professionalism and selfless dedication to the craft continues to inspire and motivate me. I am grateful to both and honored that they were my sponsors.”

Smith’s induction evening was made even more special because of who accompanied him to the event. “The best part [of the evening] was that my daughter Ashley, a Ph.D. candidate at Brown University, was my date. I am so very proud that she could share this milestone with me.”

In addition to thanking his parents, wife Michelle and sons Jack and Michael, Smith thanked his colleagues in “an organization that supports the culinary arts unconditionally.”
