1 gallon Hot Water
4 oz. Custom Culinary® Gold Label Lobster Base
1/4 cup Tomato Paste
6 Tbsp. Sherry
1/4 tsp. Cayenne Pepper
Lobster Meat, Cooked and Chopped

Directions

  1. Prepare Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter as per package directions
  2. Add Custom Culinary® Gold Label Lobster Base, tomato paste, and sherry. Simmer 3 minutes
  3. Season with cayenne pepper, then add lobster meat.
  4. Serve immediately, hold above 140ºF, or chill below 40ºF

Chef's Tips

Season with brandy if desired. Garnish with chopped parsley or tarragon.
