Amount Ingredients
1 1/2 Tbsp. Olive Oil
1 Cup Onion, Diced
1 Clove Garlic, Clove, Minced
1 Green Bell Pepper, Diced
4 oz. Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
1 1/2 lbs. Tomatoes, Diced, Canned
1 gallon Water
2 oz. Custom Culinary® Gold Label Low Sodium Chicken Base
1 1/2 Tbsp. Worcestershire Sauce
1/2 tsp. Black Pepper
12 oz. Carrots, Peeled, 1” Chunks
1/2 lb. Zucchini, 1” Chunks
1/2 lb. Yellow Squash, 1” Chunks
10 oz. Corn Tortillas, Cut in Strips
1/2 lb. Cheese, Monterey Jack, Grated
3 Tbsp. Fresh Lime Juice
1/4 cup Cilantro, Chopped

  1. In a kettle, heat olive oil. Sauté onions, garlic, green pepper and Master’s Touch® Southwest Flavor Concentrate for 5 minutes.
  2. Add tomatoes, water, Gold Label Low Sodium Chicken Base, worcestershire sauce, pepper, carrots, zucchini, yellow squash and tortilla strips. Simmer 45 minutes.
  3. Using a food processor or stick blender, puree the soup. Return to a boil.
  4. Add cheese and lime juice. Simmer 5 minutes, whisking to melt cheese.
  5. Add chopped cilantro and simmer 5 minutes. Serve hot.
