Amount Ingredients
4 lbs. Lobster Meat, Raw, Diced
1 lb. Butter, Whole
1 lb. Custom Culinary® Gold Label Lobster Base
3 Tbsp. Paprika
2 tsp. White Pepper, Ground
1 cup Tomato Paste
1 gal. Cream
3 gal. Water
4 (20-oz.) bags Custom Culinary® Whisk & Serve® Instant Cream Soup & Sauce Starter
1 qt. Brandy

  1. In an 8 gallon sauce pot or 10 gallon steam jacketed kettle, melt butter over medium high heat. Add lobster. Sauté 10-12 minutes, stirring frequently.
  2. Add Gold Label Lobster Base, paprika, pepper, and tomato paste. Sauté 1 minute, stirring constantly.
  3. Add cream and water, mixing well.
  4. Gradually add Whisk & Serve® Instant Cream Soup & Sauce Starter, stirring constantly with a wire whip. Heat to boiling. Reduce heat and gently boil 10-12 minutes, stirring occasionally.
  5. Add brandy. Heat to boiling, mixing well.
