Amount Ingredients
1 1/2 qts. Flour
1 Tbsp. Salt
1/2 Tbsp. White Pepper
96 3-oz. Veal Medallions
1 1/2 lbs. Butter
2 oz. Garlic, Chopped
2 Tbsp. Rosemary, Fresh
6 lbs. Cremini Mushrooms, Sliced
1 qt. Marsala Wine
1 1/2 gal Custom Culinary® Gold Label Demi-Glace Sauce

Recommended Product: 9662 Gold Label Demi-Glace Sauce

Alternate Product Options: 1263 Master’s Touch® Demi-Glace Sauce Concentrate, 1291 Whisk & Serve® Demi-Glace Sauce Mix


  1. Season flour with salt and pepper. Dredge veal in flour.
  2. Sauté veal in butter until done. Remove from pan and reserve medallions.
  3. Add garlic and rosemary to the pan. Cook 3 minutes. Add mushrooms and sauté until tender.
  4. Deglaze pan with wine then reduce by half. Add Gold Label Demi-Glace Sauce and reduce to desired thickness.
  5. Spoon sauce over veal and serve.

Chef's Tips

My substitute: 1 1/2 gallons of prepared Whisk & Serve® Demi-Glace or 3 jars of Master's Touch® Demi-Glace for the Gold Label Demi-Glace. May replace Cremini with any fresh wild mushroom.
