1 1/2 (20-oz.) bags Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
9 oz. Custom Culinary® Gold Label Chicken Base
1 1/2 gal. Water
1 1/2 gal. Cream
6 lbs. Frozen Chopped Broccoli, Thawed
5 lbs. Cheddar Cheese, Grated
3 lbs. Broccoli Florets, Small, Fresh
1 Tbsp. White Pepper, Ground
1/2 cup Blacken Spice

  1. In an 8 gallon sauce pot or steam jacketed kettle add water and cream. Heat to boiling. Reduce heat to a gentle boil.
  2. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, stirring constantly with a wire whip until smooth. Add Gold Label Chicken Base, mixing well.
  3. Add chopped broccoli, mixing well. Heat to boiling. Reduce heat and gently boil 7-10 minutes, stirring frequently.
  4. Add cheese, brocooli florets, white pepper, and blacken spice, mixing well. Heat to a gentle boil for 7-10 minutes, stirring frequently until broccoli is tender.
