Amount Ingredients
6 each Potatoes, Medium, Peeled
1 1/2 tsp. Tabasco
12 oz. Egg Yolks
6 lbs. Crabmeat, Lump or Snow
9 cups Bread Crumbs, Fresh, White
1 cup Red Bell Pepper, Minced
1 Tbsp. Salt
1 Tbsp. Black Pepper
1 cup Shallots, Minced
3 oz. Butter
2 qts. Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate, Prepared
1 1/4 cups Dijon Mustard

  1. Boil potatoes until soft. Mash with a fork and let cool.
  2. In a large mixing bowl, blend Tabasco and egg yolks.
  3. Add crab, mashed potatoes, 1/2 of the bread crumbs and all the bell peppers. Season with salt and pepper. Form into 48 cakes.
  4. Dredge cakes in remaining bread crumbs and bake or fry as desired, until golden brown.
  5. Sauté shallots in butter. Add to prepared Master’s Touch® Hollandaise Sauce Concentrate. Stir in mustard. Serve 1 oz over crab cakes.
