Amount Ingredients
3 slices Pancetta Bacon, Small Diced
1 lb Ground Beef, Chuck (80% lean)
2 Tbsps Olive Oil
1 1/2 cups Carrots, Medium Diced
1 cup Onions, Yellow, Medium Diced
1 tsp Garlic, Fresh, Minced
1 cup Zucchini, Medium Diced
1 cup Yellow Squash, Medium Diced
2 cups Tomatoes, canned, diced in juice
2 cups Kidney beans, Light Red, Drained, Rinsed
2 cups Cannelini Beans, Drained, Rinsed
2 qts Water
3 Tbsps Custom Culinary® Gold Label Beef Base
2 cups Spinach, Fresh, Chopped
2 cups Pasta (Short, such as Orzo or Ditalini), Cooked, Chilled
Fresh grated Parmesan cheese

  1. In a 2-gallon cook pot over medium high heat, cook bacon until browned, ground beef until thoroughly browned, stirring occasionally.
  2. Remove mixture to a bowl, retain fat in the pan. Return cook pot to stove.
  3. Add olive oil to cook pot and sauté carrots, onions and garlic 2-3 minutes until onions are translucent.
  4. Add zucchini and yellow squash; cook an additional 2 minutes, stirring occasionally.
  5. Add tomatoes, beans, water and Custom Culinary® Gold Label Beef Base, bring to a boil. Reduce heat to medium and simmer 20-25 minutes.
  6. To serve, add spinach just before service and place 2 Tbsp of cooked pasta in each bowl. Pour in hot soup and serve garnished with fresh grated Parmesan cheese.
