Lobster Bisque

Ingredients
  • 14 oz. butter
  • 14 oz. flour, all-purpose
  • 1 1/2 gal. water
  • 8 oz. Custom Culinary® Gold Label Lobster Base, No MSG Added
  • 1/8 tsp. red pepper, ground
  • 2 qts. cream, half and half
  • 1 cup Sherry, pale dry
  • 1 lb. lobster meat, cooked, small diced (optional)
Preparation Instructions
  1. In a 2 gallon Sauce Pot over medium high heat, melt Butter and stir into Flour. Cook for 2-3, stirring constantly.


  2. Add Water, Lobster Base and Red Pepper. Blend thoroughly to eliminate lumps. Bring to a boil. Reduce heat to medium, cook slowly 8 - 10 minutes.


  3. Add Cream and Sherry, cook 2-3 minutes, remove from heat.


  4. Optional: Add a garnish of ½ oz. cooked lobster meat per portion.
