Ingredients
- 170 gm pearled barley, dry
- 1 L water
- 30 ml olive oil or butter
- 170 gm celery, small diced
- 170 gm onions, small diced
- 170 gm carrots, small diced
- 5 ml garlic, fresh, minced
- 2 3/4 L water
- 115 gm Custom Culinary® Gold Label Beef Base or Custom Culinary® Gold Label Savory Roasted® Beef Base
- 9/20 kg beef, cooked, small diced
- 236 ml tomatoes, diced, canned in juice
- 1/2 ml white pepper, ground

Preparation Instructions
- In a 1 Liter sauce pan, heat barley and water to boiling. Reduce heat and gently boil 45-50 minutes until tender. Rinse under cold water. Drain and set aside.
- In an 8 Liter stock pot over medium high heat, melt butter or heat olive oil. Add celery, onions, carrots, and garlic. Sauté 5 minutes.
- Add water, Gold Label Beef Base, beef, tomatoes, and pepper. Mix well. Heat to boiling, stirring occasionally. Add cooked barley and gently boil 10-15 minutes.
