New England Style Clam Chowder

Ingredients
- 1/2 cup butter
- 1 1/2 cups onions, small diced
- 1 1/8 cup flour
- 1/2 gal water
- 2 1/2 oz Custom Culinary® Gold Label Clam Base
- 1/2 oz Custom Culinary® Gold Label Pork Base, No MSG Added
- 1/2 can chopped sea clams, canned, undrained
- 2 lbs potatoes, peeled, medium diced
- 1 qt cream, half and half

Preparation Instructions
- In a stock pot over medium high heat, melt butter. Add onions and sauté 2-3 minutes until onions are translucent.
- Blend in Flour. Cook 2-3 minutes stirring constantly.
- Add water, Gold Label Clam Base, and Gold Label Pork Base. Blend thoroughly with a wire whisk to eliminate flour lumps.
- Add canned clams and potatoes, heat to boiling, stirring occasionally. Reduce heat to medium and gently boil 12-15 minutes until potatoes are just tender.
- Finish with cream and simmer 2-3 minutes.
- Serve with Oyster Crackers.
