Ingredients

3 # 10 cans Artichoke Bottoms, Canned
8 medium Onions, Diced
8 lbs. Spinach, Cleaned
1 1/2 lbs. Butter
2 Tbsp. Salt
1 Tbsp. Black Pepper
6 jars Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate, Prepared
2 tsp. Cayenne Pepper

Directions

  1. Drain artichoke bottoms and trim each so the artichoke sits flat.
  2. In a large braising pan or tilt skillet, melt butter over medium high heat. Add onions. Sauté 5-7 minutes, stirring frequently.
  3. Add spinach, salt, and pepper. Sauté 7-10 minutes until spinach is done. Spoon spinach mixture onto artichoke hearts. Bake at 350°F for 12-15 minutes until heated through.
  4. Prepare Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate following label instructions. Spoon hollandaise over spinach filled artichoke hearts. Sprinkle slightly with cayenne pepper.
