Ingredients

10 lbs. (8 oz. each) Clams, in Shells
5 Tomatoes, Peeled, Deseeded, Diced
3 cloves Garlic, Minced
10 oz. Corn, Canned, Drained
1/4 cup Cilantro, Fresh, Chopped
3 each Scallions, Thinly Sliced
2 oz. Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
2 oz. Lime Juice
1/2 Jalapeño Peppers, Deseeded, Finely Diced
1/4 tsp. Salt
20 Lime Wedges

Directions

  1. Soak clams in cold water. Wash thoroughly. Drain. Add fresh cold water. Set aside.
  2. In a small sauté pan add tomatoes and minced garlic. Sauté over medium heat 6-8 minutes, stirring frequently. Cool.
  3. In a mixing bowl add tomatoes, corn, cilantro, scallions, Master’s Touch® Southwest Flavor Concentrate, lime juice, jalapeno peppers and salt, mixing well.
  4. Drain clams. Discard any that are opened. Place clams on a barbeque rack. Barbeque over medium high heat for 5 minutes on each side until they open.
  5. Remove clams from barbeque, top with corn salsa. Serve with lime wedges.
