Amount Ingredients
5 oz. Ground Beef
1 oz. Custom Culinary® Gold Label Wild Mushroom Tapenade
2 oz. Goat Cheese, Cut into a Coin
1 Tbsp. Flour
1 ea. Egg, Mixed
2 Tbsp. Panko Bread Crumbs
1/2 cup Spring Salad Mix
1/2 oz. Italian-Style Vinaigrette Dressing
1 ea. Brioche Bun, Toasted

  1. Preheat a flat top griddle to 350°F.
  2. Place the Gold Label Wild Mushroom Tapenade into the center of the ground beef forming a sealed beef patty.
  3. Place the Wild Mushroom Stuffed Beef Patty on preheated grill. Cook for a total of approx. 12 – 14 minutes turning 3 times to assure even cooking. Always cook to well done, 165°F internal temperature measured by a meat thermometer.
  4. While the burger is cooking, butter the inside of the bun halves and place on the hot griddle until lightly toasted, then remove and reserve.
  5. Set up a breading station with each of the flour, beaten raw eggs and Panko bread crumbs in small pans.
  6. Bread by completely coating the goat cheese with flour then eggs finally the Panko bread crumbs making sure it is evenly coated. Freeze for 10 minutes.
  7. Deep fry in preheated 350°F oil until thoroughly cooked approx. 2-3 minutes until golden.
  8. To Assemble the Burger: Place the cooked Wild Mushroom Stuffed Burger patty on the bottom bun, and add the hot fried Panko crusted goat cheese. Toss the Spring greens with the Italian dressing and place on the goat cheese. Place the top bun on.

Substitute grass fed ground beef, lamb, turkey or pork for unique variations of this recipe.
