12 lbs. Chicken, Cubed
1 1/2 cups Flour
3 lbs. Mushrooms, Quartered
12 oz. Butter, Lightly Salted
1 qt. Chardonnay
4 oz. Custom Culinary® Gold Label Chicken Base
1 pint Water
1 qt. Cream
1/2 cup Mustard Seed
2 lbs. Leeks, Sliced

Directions

  1. In a large sauté pan or tilt braising pan melt butter over medium heat. Lightly season chicken with a mixture of salt and pepper. Coat chicken lightly with flour. Brown chicken evenly in melted butter.
  2. Add mushrooms. Sauté 5-7 minutes, stirring frequently.
  3. Add Chardonnay and gently boil until reduced by one third, stirring occasionally.
  4. Add Gold Label Chicken Base, water, cream, mustard seeds, and leeks. Gently boil until leeks are tender, stirring frequently.
