Amount Ingredients
48 Beef Tenderloin Filets, 4 oz. each
1 Tbsp. Salt
3 cups Black Peppercorns, Cracked
6 cups Shallots
6 oz. Green Peppercorns, Canned, Drained
1 cup Brandy
2 cups Cream, Heavy
13 1/2 oz. Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate
1 1/2 qts. Water

Recommended Product: 1263 Master’s Touch® Demi-Glace Sauce Concentrate


  1. Season filets with salt and rub with cracked peppercorns.
  2. Sauté beef for 2 minutes each side. Add shallots and green peppercorns and cook until medium rare. Remove filets. Keep hot.
  3. Deglaze pan with brandy. Add cream. Reduce by one half. Add Master’s Touch® Demi-Glace Sauce Concentrate and water and stir well. Simmer until sauce is thickened.
  4. Spoon 2 oz. of sauce sauce over each filet before serving.
