Amount Ingredients
48 (6-oz. each) Duck Breasts, Skinless
1 tsp. Salt
1 tsp. Black Pepper
1 tsp. Thyme
6 oz. Butter
2 Tbsp. Olive Oil
4 lbs. Onions, Diced
3 oz. Garlic, Chopped
1 1/2 cups Orange Juice
1 tub Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Prepared
1 cup Apricot Preserves
1 1/2 cups Honey

Recommended Product: 1263 Master’s Touch® Demi-Glace Sauce Concentrate


  1. Season duck with salt, pepper and thyme.
  2. In a large pan, melt butter and add olive oil. Sauté duck for 5 minutes on each side.
  3. Add onions and garlic. Continue to cook duck until 150°F internal. Remove duck from pan. Reserve onions and garlic.
  4. Deglaze pan with juice. Reduce by half. Add prepared Master’s Touch® Demi-Glace Sauce Concentrate. Stir in preserves and honey. Heat gently, stirring constantly.
  5. Spoon sauce over duck breast before service.
