Amount Ingredients
18 racks, 8 ribs each Lamb Racks
1 Tbsp. Salt
1 tsp. Black Pepper
3 cups Olive Oil
1 1/2 qts. Bread Crumbs
1/4 cup Basil, Flakes
1/4 cup Rosemary, Flakes
1/4 cup Parsley, Flakes
1/4 cup Thyme, Flakes
1/4 cup Chervil, Flakes
1 1/2 qts. Dijon Mustard
1 tub Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Prepared
3 lbs. Apple Mint Jelly
1/2 cup Mint, Fresh, Minced

  1. Season lamb racks with salt and pepper.
  2. In a large braising pan heat olive oil over medium high heat. Sear lamb racks until evenly brown. Place in a 375°F oven for 15 minutes. Remove from oven.
  3. In a mixing bowl, combine bread crumbs, basil, rosemary, parsley, thyme and chervil, mixing well. Coat lamb racks with dijon mustard then dredge in herb mixture. Place on a baking sheet. Roast at 375°F until an internal temperature of 140°F. Keep hot.
  4. In a 2 gallon sauce pot, prepare Master's Touch© Demi-Glace Concentrate following label instructions. Add mint jelly. Gently boil 7-10 minutes, stirring occasionally. Add fresh mint. Gently boil 2-4 minutes. Serve with sliced lamb racks.
