Ingredients

8 oz. Custom Culinary® Gold Label Fish Base
1/2 gal. Water
48 6-oz. Grouper Fillets
1/2 gal White Wine
1/4 cup Tarragon, Fresh
40 whole Green Peppercorns
2 Jars Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate, Prepared
1 #10 can Mandarin Oranges, Canned, Drained

Directions

  1. In a 1 gallon sauce pot combine Gold Label Fish Base and water, mixing well.
  2. Add grouper to a buttered baking dish. Cover with wine and fish broth. Add tarragon and peppercorns. Cover with parchment paper. Bake at 325°F for 30 minutes or until fish flakes with a fork.
  3. Drain mandarin oranges, reserve juice. In a 2 qt. sauce pot reduce juice by 75%. Set aside.
  4. Prepare Master's Touch® Hollandaise Sauce Concentrate following label instructions. Add concentrated mandarin juice, mixing well.
  5. Remove grouper from oven dish. Pat dry. Top with 2 oz. mandarin hollandaise and orange segments.
