Ingredients

48 each Oysters, Shucked
1 lb. Seasoned Flour
1 1/2 qts. Buttermilk
1 lb. Bread Crumbs
5 oz. can Chipotle Peppers, Canned in Adobo Sauce
1/2 gal. Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate, Prepared

Directions

  1. Coat oysters in flour, dip in buttermilk and coat in bread crumbs.
  2. Deep-fry until crispy in 360°F oil. Remove oysters and set aside.
  3. Purée canned chipotle in a food processor.
  4. Add chipotle purée to prepared Master’s Touch® Hollandaise Sauce Concentrate.
  5. Serve oysters with Chipotle Hollandaise sauce for dipping.
