Ingredients

Amount Ingredients
4 dozen Oysters, Whole, In the Shell
1 lb. Watercress Leaves
1 lb. Spinach Leaves
4 oz. Butter
to taste White Pepper
2 jars Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate
4 Tbsp. Chives, Chopped

Recommended Product: 1261 Master's Touch® Hollandaise Sauce Concentrate

Directions

  1. Open oysters. Strain juice into a container. Set aside. Remove oysters from the shell. Wash shells.
  2. In a large sauté pan, melt butter over medium high heat. Add watercress, spinach, white pepper, and oyster juice. Sauté until liquid evaporates.
  3. Stuff shells with watercress and spinach mixture. Top with an oyster. Roast in a 400°F oven for 10 minutes.
  4. Prepare Master’s Touch® Hollandaise Sauce Concentrate following label instructions. Spoon 2 oz. over oysters and sprinkle with chopped chives.
