Ingredients

8 lbs. Salmon Meat, Chilled
6 each Eggs, Chilled
6 cups Whipping Cream
2 Tbsp. Dill Weed
2 tsp. Salt
1 tsp. White Pepper, Ground
3 Jars Custom Culinary® Master’s Touch® Hollandaise Sauce Concentrate, Prepared
1/3 cup Capers
1/3 cup Green Olives, Chopped
1/3 cup Parsley, Fresh, Chopped
1/3 cup Chives, Fresh, Chopped
1 Lemon, Juiced

Recommended Product: 1261 Master's Touch® Hollandaise Sauce Concentrate

Directions

  1. In a large food processor or verticle cutter, purée salmon. With food processor running, gradually add eggs, then cream, mixing until smooth. Add dill, salt and pepper, mixing well.
  2. Add puréed salmon mixture to buttered bread pans. Place on sheet pans in a preheated 350°F oven. Add hot water to sheet pans to create a water bath. Bake at 350°F for 45 minutes to 1 hour until 160°F internal temperature. Remove from oven and let stand 10 minutes.
  3. In a 1 gallon sauce pot prepare Master's Touch® Hollandaise Sauce Concentrate following label instructions. Add capers, olives, parsley, chives and lemon juice, mixing well. Serve over sliced Salmon Loaf.
