Ingredients

15 lbs. Top Round, Julienne Cut
1/2 cup Vegetable Oil
6 oz. Custom Culinary® Gold Label Beef Base
1 gal. Water
1 cup Tomato Purée
1/8 cup Worcestershire Sauce
1 1/4 cups Flour
1 cup Cold Water
4 lbs. Mushrooms, Sliced
1/4 cup Vegetable Oil
1 1/2 qts. Sour Cream

Directions

  1. In a large braising pan or tilt skillet heat oil over medium high heat. Add meat. Sauté until evenly browned.
  2. Add 1 gallon of water, Gold Label Beef Base, tomato puree and Worcestershire sauce, mixing well. H eat to boiling, reduce heat and gently boil 1-1 1/2 hours until meat is tender.
  3. In a mixing bowl add 1 cup cold water. Gradually add flour mixing into a smooth paste with a wire whip. Gradually add mixture to meat, mixing well. Heat to boiling. Reduce heat and gently boil 15-20 minutes, stirring occasionally.
  4. In a large sauté pan heat 1/4 cup oil over medium high heat. Sauté mushrooms 3-5 minutes. Add to meat, mixing well. Heat to a gentle boil for 3-5 minutes.
  5. Blend in sour cream just before serving.
