1 1/2 lbs. Onions, Medium Diced
1 lb. Butter, Lightly Salted
1 lb. Custom Culinary® Gold Label Beef Base
4 gal. Water
1 1/2 lbs. Green Cabbage, Chopped
1 1/2 lbs. Carrots, Grated
1 1/2 lbs. Celery, Diced
3 lbs. Potatoes, Diced
1 lb. Tomatoes, Crushed in Puree
5 lbs. Beets, Canned, Diced
2 qts. Beet Juice
1/2 cup Lemon Juice
1 Tbsp. Black Pepper
1 1/2 qts. Sour Cream

  1. In an 8 gallon sauce pot or tilt skillet melt butter over medium high heat. Add onions. Sauté 5-7 minutes, sitrring frequently.
  2. Add water, Custom Culinary® Gold Label Beef Base, cabbage, carrots, celery, and potatoes. Heat to boiling. Reduce heat and gently boil 15-20 minutes until vegetables are tender, stirring occasionally.
  3. Add tomatoes, beets, beet juice, lemon juice and black pepper. Heat to boiling. Reduce heat and gently boil 5-7 minutes.
  4. Top with a #60 scoop of sour cream at service.
