Amount Ingredients
2 oz. Garlic, Granulated
2 oz. Onion, Granulated
1 oz. Rosemary, Crushed
1 oz. Thyme
1 Tbsp. Black Pepper
2/3 cup Olive Oil
48 (6-oz. each) Venison Chops
1 1/2 qts. Shallots, Chopped
1 cup Butter
1 qt. Flurie Wine (or Hearty Burgundy)
3 tubs Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Prepared
1 cup Parsley, Chopped

  1. In a mixing bowl combine garlic, onion, rosemary, thyme and pepper, mixing well.
  2. Coat venison chops with olive oil. Season with herb mixture. Grill until medium rare. Keep hot.
  3. In a 2 gallon sauce pot, melt butter over medium high heat. Add shallots. Sauté until shallots are golden brown, stirring frequently. Deglaze pan with wine, reduce by half.
  4. Add prepared Master's Touch® Demi-Glace Concentrate, mixing well. Gently boil 5-7 minutes, stirring frequently. Serve over grilled venison chops.
