Amount Ingredients
1 lb. Shiitake Mushrooms, Julienne Cut
2 oz. Sesame Oil
1/2 cup Custom Culinary® Gold Label Mushroom Base
1/2 cup Orange Peel, Grated
1 Tbsp. Szechwan Peppercorns, Crushed
1 Tbsp. Chinese Chili Sauce
2 oz. Ginger, Finely Minced
1 cup Light Soy Sauce
1 qt. Dry Sherry
1 gal. Cream

  1. In a 2 gallon sauce pot heat oil over medium high heat. Add shitake mushrooms. Sauté 3-5 minutes, stirring frequently.
  2. Add Gold Label Mushroom Base, orange peel, peppercorns, chili sauce and ginger. Sauté 2-3 minutes, stirring constantly.
  3. Add soy sauce and sherry, reduce by half. Add cream, mixing well. Heat to boiling. Reduce by 1/3, stirring frequently.
