Amount Ingredients
48 (6 oz.) each Chicken Breast, Skinless, Boneless
1 Tbsp. Salt
1/2 Tbsp. Black Pepper
1 1/2 lbs. Butter
2 lbs. Shiitake Mushrooms, Sliced
24 oz. Calvados Brandy
6 cup Apple Juice
6 cup Cream, Heavy
1 gal. Custom Culinary® Master’s Touch® Demi-Glace Sauce Concentrate, Prepared According to Package Directions

Recommended Product: 1263 Master’s Touch® Demi-Glace Sauce Concentrate


  1. Slightly pound chicken breast to tenderize. Season with salt and pepper.
  2. Sauté chicken until done. Remove from pan and reserve.
  3. Add mushrooms to pan and cook until tender. Remove from pan and reserve.
  4. Deglaze pan with brandy. Add apple juice and cream. Reduce by half. Add prepared Master’s Touch® Demi-Glace Sauce Concentrate to pan and reduce to desired thickness.
  5. Spoon 2 oz. of sauce over chicken breast and garnish with mushrooms.
