Ingredients

Amount Ingredients
50 Mushroom Caps, Medium
2 cups Onion, Diced 1/4-Inch
1 Tbsp. Garlic, Fresh, Chopped
1/4 cup Butter
3 lbs. Spinach, Fresh, Stems Removed
Salt, to Taste
White Pepper, to Taste
1/2 lb. Butter, Melted
12 oz. Custom Culinary® Whisk & Serve® Hollandaise Sauce Mix
1/2 gal. Water, Hot
1/4 cup Custom Culinary® Chili Seasoning

Directions

  1. Remove any stems from mushrooms. Trim caps to sit flat. Reserve.
  2. Sauté onion and garlic in butter until tender. Add spinach and cook until just tender. Season with salt and pepper. Let cool. Drain off liquid.
  3. Stuff mixture into mushroom caps. Bake caps at 350°F for 15 minutes.
  4. In a sauce pan, thoroughly combine Whisk & Serve® Hollandaise Sauce Mix into melted butter. Add hot water and whisk until thick and smooth. Stir in Chili Seasoning. Let simmer 10 minutes to allow chili flavor to develop.
  5. Top baked mushroom caps with Chili Hollandaise and serve.
