3 #5 cans Canned Clams, Drained (Reserve Liquid)
3 gal. Liquid (Reserved Clam Juice + Water)
6 oz. Custom Culinary® Gold Label Clam Base
3 oz. Custom Culinary® Gold Label Pork Base
3 (20-oz.) bags Custom Culinary® Whisk & Serve® Cream Soup & Sauce Starter
5 lbs. Potatoes, Diced, Cooked
2 tsp. White Pepper
1 Tbsp. Thyme Leaves

Directions

  1. In a 10 gallon steam jacketed kettle or 8 gallon sauce pot, melt butter over medium heat. Add onions. Sauté over medium heat 5-7 minutes, stirring occasionally.
  2. Combine reserved clam juice and water to equal 3 gallons. Add Gold Label Clam and Pork Base, mixing well.
  3. Gradually add Whisk & Serve® Cream Soup & Sauce Starter, stirring constantly with a wire whip until well blended. Heat to a gentle boil for 5 minutes, sitrring frequently.
  4. Add clams, cooked potatoes, white pepper and thyme, mixing well. Heat to boiling. Reduce heat and gently boil 4 minutes, stirring occasionally.
