Ingredients

6 lbs. Turkey Tender Meat, Raw, Diced 1/2"
2 1/2 cups Leeks, Julienne
3 oz. Garlic, Minced
1 lb. Butter, Lightly Salted
10 oz. All Purpose Flour
8 oz. Custom Culinary® Gold Label Turkey Base
1 1/4 gal. Cream
1 qt. Artichoke Hearts, Canned, Quartered
1 tsp. White Pepper

Directions

  1. In a large braising pan, melt butter over medium high heat. Add leeks and garlic. Sauté over medium heat 5-7 minutes, stirring frequently.
  2. Add turkey. Sauté over medium high heat until evenly browned, stirring frequently.
  3. Add flour, mixing well. Cook 2 minutes over medium heat, stirring constantly.
  4. Add cream and Custom Culinary® Gold Label Turkey Base, mixing well. Heat to boiling. Reduce heat and gently boil 10 minutes until mixture thickens, stirring frequently.
  5. Add artichokes and white pepper, mixing well. Gently boil 3 minutes, stirring occasionally.
