Ingredients

1 cup Butter, Salted
3/4 cup Onions, Yellow, Fresh, Medium Diced
1 cup Flour, All-Purposed, Bleached, Enriched
1 3/4 qts Water
3 Tbsps and 1 tsp Custom Culinary® Gold Label Chicken Base
1 1/2 qts Broccoli, Frozen, Cut
2 tsp Lemon Juice, Fresh
1/8 tsp Red Pepper, Ground
1 cup Half & Half
1/2 tsp Onion Powder

Directions

  1. In a 6 qt. saucepan over medium high heat, melt butter. Add onions, saute 3-5 minutes.
  2. Blend in flour. Cook over medium heat 2-3 minutes, stirring constantly.
  3. Add water, Custom Culinary® Gold Label Chicken Base, broccoli, lemon juice and red pepper, stirring constantly. Heat to boiling over medium high heat, stirring frequently. Reduce heat and gently boil for 7 minutes, stirring occasionally.
  4. Add half & half and onion powder, mixing well. Heat to boiling over medium high heat, stirring constantly. Reduce heat and gently boil for 2 minutes, stirring frequently.
