4 lbs White Grapes, Seedless
2 lbs/ 4 pcs Cucumbers, Peeled, Seeded, Large Diced
1 cup Green Onions, Sliced
1 Tbsp Garlic, Fresh, Minced
1/4 cup Custom Culinary® Master's Touch® Chicken Base
1/2 cup White Wine Vinegar
1 qrt Water
1 Tbsp to taste Salt
2 qts Whole Cream
32 ea Mint Leaves
2 1/5 lbs Green Sour Apples, Julienne Cut

Directions

  1. In a blender or food processor, combine olive oil, grapes, cucumbers, green onions, garlic, Custom Culinary® Master's Touch® Chicken Base, vinegar, water, salt and cream. Puree until soup is smooth. Chill.
  2. Garnish each portion with a mint leaf and apples.
