6 oz. Ginger
6 medium Onions, Diced
6 pound Turkey, Tender Meat, Medium Diced
1 1/2 cups Vegetable Oil
6 Japanese Eggplant, Medium Diced
6 Zucchini, Small Diced
6 Green Bell Pepper, Small Diced
12 Tomatoes, Medium Diced
1 qt. Water
2 oz. Custom Culinary® Gold Label Turkey Base
3 oz. Tomato Paste
3 oz. Asian Chili Sauce
3 bunches Oregano Leaves, Fresh
9 oz. Oyster Sauce
6 Lime, Zest
6 Mint Leaves, Chiffonade
6 Basil Leaves, Chiffonade
1 cup Honey

Directions

  1. In a 4 gal. sauce pot, heat oil over medium high heat. Add garlic, ginger, onions, and turkey. Cover and sweat over medium heat until turkey is tender, stirring frequently.
  2. Add eggplant, zucchini, peppers, and tomatoes. Sauté over medium high heat 4-6 minutes.
  3. Add water, Custom Culinary® Gold Label Turkey Base, tomato paste, chili sauce, oregano, oyster sauce, lime, mint leaves, basil, and honey. Heat to boiling over medium high heat. Reduce heat and gently boil 15-20 minutes, stirring frequently.
