Ingredients

6 oz. Butter, Lightly Salted
4 Bananas, Diced
4 each Apples, Granny Smith, Peeled and Diced
20 each (6-ounce) Chicken Breast, Boned, Pocketed
2 Tbsp. Salt
1/2 tsp. White Pepper
2 cups Flour
1/2 cup Vegetable Oil
30 oz. Custom Culinary® Gold Label Thai Style Roasted Peanut Sauce

Directions

  1. In a 4 qt. sauce pan melt butter over medium heat. Add bananas and apples. Sauté over medium heat 3-4 minutes, stirring frequently.
  2. Stuff chicken breasts with bananas and apples. Season with salt and pepper. Dredge in flour. Add vegetable oil and brown chicken breasts. Then bake at 350°F for 20-30 minutes until done. Serve each chicken breast with 1 1/2 oz Gold Label Thai Style Roasted Peanut Sauce.
