Ingredients

1 1/2 qts. Water, Hot
3 oz. Custom Culinary® Gold Label Low Sodium Beef Base
2 oz. Shallots, Minced
4 cloves Garlic, Minced
2 1/2 Tbsp. Thyme Leaves, Dried
2 oz. Tomato Paste, Low Sodium
1 1/2 Tbsp. Black Pepper, Coarse Ground
1/2 cup Dijon Mustard, Smooth
1/2 cup Corn Starch

Directions

  1. In a 2 quart sauce pot combine hot water and Gold Label Low Sodium Beef Base, mixing well.
  2. In another 2 quart sauce pot add 1/2 cup prepared beef stock. Add shallots and garlic. Heat to a gently boil. Cover and let sweat 3-5 minutes, stirring occasionally.
  3. Add thyme, tomato paste, black pepper and mustard, mixing well. Heat to boiling. Reduce heat an gently boil 3 minutes, stirring frequently. Add remaining stock, heat to a gentle boil.
  4. In a small mixing bowl combine 1/2 cup prepared stock and corn starch, mixing well with a wire whip. Gradually add the corn starch and water slurry to boiling liquid, stirring constantly with a wire whip. Gently boil 3-5 minutes, stirring occasionally.
