8 Chilis, Seedless
8 medium Onions, Chopped
4 Tbsp Garlic, Fresh, Chopped
40 Tomatoes, Seeded, Chopped
1/2 cup Pine Nuts
1/2 cup Peanuts
1/2 cup Pecans
1/2 cup Almonds
6 oz Custom Culinary® Gold Label Beef Base
1/4 cup Clove, Ground
1 Tbsp Cinnamon, Ground
2 tsp Anise, Ground
2 Tbsp Cumin, Ground
1 tsp Black Pepper, Ground

Directions

  1. In a 1.5 gal sauce pot heat vegetable oil over medium high heat. Sauté chilis, onions, and garlic for approximately 20 minutes, stirring frequently.
  2. Add tomatoes, mixing well. Sauté 10-12 minutes, stirring frequently. Add nuts and sauté 5-7 minutes, stirring occasionally.
  3. In a food processor add sautéed ingredients, Gold Label Beef Base, cloves, cinnamon, anise, cumin and black pepper. Puree into a smooth paste.
