Ingredients

6 oz Turkey Bacon, Small Diced
2 Tbsps Canola Oil
1 1/2 cups Onions, Yellow, Medium Diced
1 cup Green Bell Peppers, Medium Diced
1 cup Celery, Medium Diced
2 cups Carrots, Medium DIced
3/4 cup and 2 Tbsps All Purpose Flour, Bleached, Enriched
3 qts Water, Hot
1/2 cup and 1 Tbsp Custom Culinary® Gold Label Low Sodium Chicken Base
2 cups Whole Milk, Hot
1 1/2 qts Corn, Yellow, Whole kernel, Frozen
3 1/2 cups Creamed Corn, Golden, Super Sweet, Canned
3 cups Potatoes, Medium Diced
1/8 tsp White Pepper, Ground
1/8 tsp Red Pepper Sauce
1/8 tsp Worcestershire Sauce

Directions

  1. In a 12 qt. sauce pot over medium high heat, sauté bacon until browned, approximately 7 minutes. DO NOT DRAIN FAT.
  2. Add oil; heat. Add onions, peppers, celery and carrots; sauté 3 minutes.
  3. Blend in flour; cook over medium heat 2-3 minutes, stirring constantly.
  4. Add water, Custom Culinary® Gold Label Low Sodium Chicken base, milk, whole kernel corn, creamed corn, potatoes, white pepper, red pepper sauce and Worcestershire sauce, mixing well. Heat to boilingover medium high heat, stirring constantly. Reduce heat and gently boil until potatoes are cooked al dente, 8-10 minutes, stirring occasionally.
