Ingredients

2 qts Water
1/3 cup Custom Culinary® Gold Label Lobster Base
2 tsps Old Bay® Seasoning
1/2 tsp Red pepper sauce
1/4 tsp White pepper, ground
1/8 tsps Mace, ground
3 cups Cream, half and half
1 1/3 cups Crabmeat, lump
1 cup Solid pack pumpkin
1/3 cup Sherry, pale dry
1 Tbsp Almonds, slivered, crumbled
2 cups Butternut squash, cooked, medium diced
1 1/3 cups Lobster, cooked, medium diced
2 Tbsps Parsley, fresh chopped

Directions

  1. In an 8 quart sauce pot, combine water, lobster base, Old Bay Seasoning, pepper sauce, white pepper and mace; mix well with a wire whip. Heat to boiling over medium high heat 1-2 minutes.
  2. Add cream, crabmeat, pumpkin, sherry and almonds; mix well. Reduce heat and gently boil 5 minutes, stirring occasionally.
  3. Add squash, lobster and parsley. Gently boil 1 minute, stirring occasionally.
