Heat 2 gallons of water to a minimum of 190°F. Turn off heat and immediately add one canister (38 oz.) of sauce mix to hot water. Whisk vigorously until sauce is thick and smooth. Let stand, stir just before service. Serve at 160°F-180°F. For a smaller batch, follow the directions above using 1 quart (32 fl. oz.) of hot water (190°) and 1 cup (5 oz. by weight) sauce mix.
