Barbecued Clams with Corn Salsa

An enticing starter perfect for a small bite before the main course. Featuring Custom Culinary® Master’s Touch® Southwest Flavor Concentrate, Barbecued Clams with Corn Salsa includes clams topped with tomatoes, corn, cilantro, scallions, lime juice, and jalapeno peppers in salsa.


What You'll Need

Amount Ingredients
10 lbs. (8 oz. each) Clams, in Shells
5 Tomatoes, Peeled, Deseeded, Diced
3 cloves Garlic, Minced
10 oz. Corn, Canned, Drained
1/4 cup Cilantro, Fresh, Chopped
3 each Scallions, Thinly Sliced
2 oz. Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
2 oz. Lime Juice
1/2 Jalapeño Peppers, Deseeded, Finely Diced
1/4 tsp. Salt
20 Lime Wedges
PREPARATION

  1. Soak clams in cold water. Wash thoroughly. Drain. Add fresh cold water. Set aside.
  2. In a small sauté pan add tomatoes and minced garlic. Sauté over medium heat 6-8 minutes, stirring frequently. Cool.
  3. In a mixing bowl add tomatoes, corn, cilantro, scallions, Master’s Touch® Southwest Flavor Concentrate, lime juice, jalapeno peppers and salt, mixing well.
  4. Drain clams. Discard any that are opened. Place clams on a barbeque rack. Barbeque over medium high heat for 5 minutes on each side until they open.
  5. Remove clams from barbeque, top with corn salsa. Serve with lime wedges.
