Korean Poke Slider

An enticing starter perfect for a small bite before the main course. Featuring Custom Culinary® Bibimbap sauce, Korean Poke Slider consists of yellowfin tuna, scallions, mayo, cilantro, bok choy, nampla, sambal, poke patty on a steamed bao.

Yield: 3 Sliders

Amount Ingredients
1/2 lb Sushi Grade Yellowfin Tuna (Small Dice)
1 tb Scallions (Finely Sliced)
2 tb Mayo
1 tb Cilantro (Chopped)
1 tb Panko Crumbs
2 ts Bok Choy (Roughly Chopped)
1 tb Nampla
1 tb Sambal
1 tb Low Sodium Soy Sauce
3 each Poke Patty (Approximately 90 gms)
3 each Steamed Bao or Steamed Frozen Yeast Roll
2 oz. Seasoned Bok Choy
4-1/2 oz. Custom Culinary® Bibimbap sauce

  1. Combine tuna, scallions, mayo, cilantro, and panko crumbs and mix until well incorporated.
  2. Adjust seasoning with sea salt as desired.
  3. Make 3 equal sized slider patties approximately 90 gms each. Lightly pan sear to order.
  4. In a small wok or sauté pan over high heat sauté bok choy in a small amount of peanut oil until wilted.
  5. Add Nampla and Sambal and stir in.
  6. Add soy sauce and simmer until almost evaporated.
  7. When ready for service pan sear 1 patty. Place atop a steamed bao.
  8. Drizzle 1.5 oz. Bibimbap sauce.
  9. Top with 2 oz. of the seasoned bok choy.
  10. Serve 1 of slider of each variety per order.
