1 Tbsp. Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
1 lb. Herb Boursin Cheese
1 lb. Domestic Goat Cheese
1 lb. Cheddar Cheese, Shredded
4 oz. Sun-Dried Tomatoes, Minced
1 Tbsp. Roasted Garlic, Pureed
4 oz. Basil Pesto
3 lbs. Chicken Meat, Cooked, 3/4" Diced or Shredded
12 oz. Artichoke Hearts, Canned, Quartered
12 oz. Red Peppers, Roasted, 1/4" Sliced
16 Sun-Dried Tomato-Flavored 10" flour tortillas
2 Tbsp. Olive Oil
PREPARATION

  1. In an electric mixer bowl add Gold Label Savory Roasted® Chicken Base, Master’s Touch® Southwest Flavor Concentrate, Boursin cheese, goat cheese, cheddar cheese, sun-dried tomatoes, garlic, and pesto. Using a paddle attachment, mix until well blended. Scrape into a large mixing bowl.
  2. Add chicken, artichokes and peppers. Fold in gently with spatula.
  3. To prepare quesadillas: Warm tortillas slightly. Spread 8 oz. of the filling mixture on half of the tortilla leaving about an inch empty space from the edge. Fold tortilla in half and press down firmly.
  4. Preheat heavy-bottomed, nonstick sauté pan over medium heat. Brush oil on both sides of the tortilla. Sauté for 2 to 3 minutes on each side until golden brown and heated through. Cut into 3 wedges for service.
