Mole Chicken Bao Sliders

An enticing starter perfect for a small bite before the main course. Featuring Custom Culinary® Mole Negro Sauce, Mole Chicken Bao Sliders are made up of mole chicken, pickled cucumbers, sesame seeds. Scallions, radish, and cilantro on bao buns.

Mole Chicken
3 CupsChicken Breast, skinless
3 CupsMole Negro Sauce
1 CupWater
Bao Assembly
3 EachBao Buns
3/4 CupCooked, Mole Chicken
2 EaPickled Cucumber, sliced
1-1/2 tsp.White and Black Sesame Seeds
1-1/2 tsp.Scallion, sliced
1 TbRadish, julienned
1 TbCilantro

  1. Mole Chicken Breast
  2. 1. In a heavy bottomed pot, heat 3 tablespoons of vegetable oil on high until it begins to smoke.
  3. 2. Add chicken and sear until brown on both sides.
  4. 3. Remove chicken and add mole negro sauce and water to deglaze.
  5. 4. Bring mole and water mixture to a simmer and add seared chicken breast back in. The liquid should cover 3/4 of the chicken breast.
  6. 5. cover and let simmer for 40-60 minutes or until chicken breast can be easily shredded.
  7. 6. Shred the chicken breast and allow meat to cool in cooking liquid.
  8. Bao Assembly (Makes 3 Bao)
  9. Each bao is built in the following order: Bao Bun, Shredded Chicken, Pickled Cucumber, Sesame Seeds, Scallion, Radish, Cilantro.
