Wasabi Ginger Ponzu Poke Slider

An enticing starter perfect for a small bite or in pairs for a sharable appetizer. Featuring Custom Culinary® Gold Label Wasabi Ginger Ponzu, Wasabi Ginger Ponzu Poke Slider combines the bold flavors of yellowfin tuna, scallions, mayo, sesame seaweed salad, all nestled into a soft steamed bao.

What You'll Need

Yield: 3 Sliders

Amount Ingredients
1/2 lb Sushi Grade Yellowfin Tuna (Small Dice)
1 tb Scallions (Finely Sliced)
2 tb Mayo
1 tb Panko Crumbs
1 tb Cilantro (Chopped)
3 oz. Prepared Sesame Seaweed Salad
3 each Poke Patty (Approximately 90 gms.)
3 each Steamed Bao
3 oz. Custom Culinary® Gold Label Wasabi Ginger Ponzu

  1. Combine tuna, scallions, mayo, cilantro, panko crumbs and mix until well incorporated.
  2. Adjust seasoning with Maldon sea salt and black pepper as desired.
  3. Make 3 equal sized slider patties approximately 90 gms each. Lightly pan sear to order.
  4. When ready for service pan sear 1 patty. Place atop a steamed bao.
  5. Top with 1 oz. of prepared sesame seaweed salad. Drizzled with 1 oz. each additional Wasabi Ginger Ponzu.
  6. Serve 1 of each variety slider per order
