Kimchi Loaded Fries

Hand-cut French fries topped with a spicy kimchi and peanut slaw featuring Passport Global Flavors by Custom Culinary® Kimchi Prep, garnished with scallions and a drizzle of bibimbap mayo made with Passport Global Flavors by Custom Culinary® Bibimbap Sauce.

3 quarts French Fries, Hand Cut, Cooked
  Spicy Kim Chi and Peanut Slaw (sub recipe)
2 quarts Napa Cabbage, Chopped
1/4 cups Passport Global Flavors by Custom Culinary® Kimchi Prep
  Spicy Kim Chi and Peanut Slaw (sub recipe)
2 cup Kim Chi (sub recipe)
1/2 cup Carrots, Shredded
1/4 cup Peanuts, Roasted
2 tb Red Bell Pepper, Julienned
1 tb White Sesame Seeds, Toasted
  Bibimbap Mayo (sub recipe)
1 cup Mayonnaise
3 tb Passport Global Flavors by Custom Culinary® Bibimbap Sauce
PREPARATION

  1. Kimchi (sub recipe) Massage kimchi base into chopped Napa Cabbage. Let mixture sit for 24 hours in a sealed container before use.
  2. Spicy Kimchi and Peanut Slaw (sub recipe) Gently fold all ingredients together until evenly combined.
  3. Bibimbap Mayo (sub recipe) Whisk both ingredients together until evenly combined.
  4. Build  in the following order:
  5. French Fries, Hand Cut, Cooked (3 quarts)
  6. Spicy Kimchi and Peanut Slaw (2 cups)
  7. Scallion, Sliced (.5 cup)
  8. Bibimbap Mayo (serve 2 Tablespoons on the side for dipping)
