Sautéed Beef Tenderloin Tips with Mushrooms

1/2 cup Vegetable Oil
12 lbs. Beef Tenderloin Tips
2 lbs. Onion, Small Diced
4 lbs. Mushrooms, Small Diced
2 qts. Custom Culinary® Gold Label Demi-Glace Sauce
to taste Salt
to taste Pepper
PREPARATION

  1. In a large braising pan, heat 1/4 cup vegetable oil over medium high heat. Add 6 pounds beef tips. Sauté until evenly brown. Remove beef tips from pan. Repeat procedure with second 6 pounds of meat.
  2. Add remaining 1/4 cup vegetable oil to braising pan, heat over medium high heat. Add onions and mushrooms. Sauté 3-5 minutes, stirring frequently.
  3. Return beef tips to the braising pan with onions and mushrooms, mixing well until heated through.
  4. Add Gold Label Demi-Glace Sauce to beef tips to coat beef, mushrooms and onions, mixing well. Season with salt and black pepper.
