Bolengere Potatoes

Amount Ingredients
6 medium Onions, Sliced
2 lbs. Butter, Lightly Salted
12 lbs. Idaho Potatoes, Peeled, Thinly Sliced
1 cup Chervil, Freshly Chopped
1/4 cup Black Pepper
12 oz. Custom Culinary® Gold Label Chicken Base
2 qts. Water, Hot
1-1/2 cups Parmesan Cheese, Grated
3 oz. Hungarian Paprika
PREPARATION

  1. In a 2 qt. sauce pot melt butter over medium heat. Add onions and sauté 5-7 minutes, stirring frequently.
  2. Add sliced potatoes to a 2" hotel pan. Add sauteed onions, chervil, and black pepper, toss and mix until potatoes are evenly coated.
  3. Combine hot water and Gold Label Chicken Base. Mix until well blended. Pour over potatoes.
  4. Sprinkle with parmesan cheese and paprika. Bake at 350°F for 35-40 minutes or until potatoes are tender.
