Amount Ingredients
1 cup Custom Culinary® Master’s Touch® Southwest Flavor Concentrate
1-1/2 lbs. Butter, Soft
1 cup Parsley, Fresh Chopped
1/2 cup Garlic, Minced, Roasted
1/2 cup Shallots, Minced, Roasted
2 Tbsp. Dijon Mustard
1 Tbsp. Worcestershire Sauce
1 lb. Broccoli Florets
1 lb. Cauliflower Florets
1 lb. Carrots, Whole
1 lb. Asparagus Tips
1 lb. Baby Wax Beans
4 Yellow Corn Tortillas, Julienne, Fried
4 Blue Corn Tortillas, Julienne, Fried
4 Red Corn Tortillas, Julienne, Fried
PREPARATION

  1. Combine Master’s Touch® Southwest Flavor Concentrate with butter, parsley, garlic, shallots, mustard and worcestershire sauce. Mix well and reserve.
  2. Steam all vegetables until tender. Toss with flavored butter. Arrange in a hotel pan. Keep hot.
  3. Mix tortillas together. Sprinkle on top of vegetables just before service.
